I assume you aren't talking about the wine plan add-on, because that is only by the bottle. That's part of why we don't do it - DH often prefers a mixed drink, beer, scotch, port, etc. rather than wine with dinner.
Most of Disney's nicer TS (not just signatures) have suggested wine pairings noted on the menus. Some restaurants have do better variety than others, and the signatures are better than the 1 credit restaurants in that regard. I especially liked the wine lists at California Grill and Artist Point. The ice flight (tasting pours of 4 different ice wines) is a big part of the reason I made sure to fit Artist Point in again; I was pregnant on our last trip and didn't get to try it!
