Will WDW restaurants allow changes or special requests?

We will be eating at either Teppan Edo or Tokyo Dining one night during our stay because my son loves California rolls but I doubt he'll like the smelt roe that comes on it (the place by us doesn't use it so he's never had it that way). Would they make them without the roe?

That request shouldn't be a problem.

Most places will do their best to honor requests. If something is a garnish or a topping, it's usually pretty easy to have it left off. However, in the end, it varies by restaurant, so you won't know for sure until you get there and ask.
