Will this plan be ok?

Going January 29 through Saturday the 4th. Driving, so our first park day is Monday. Almost everyone goes to MK on Monday (their 1st day)
So I'm thinking Monday DHS. Tues Epcot (evening EMH) so take a swim break mid day if it's warm enough, then back to Epcot around 5 till 10. Will TT and Soaring be open all of EMH?
Wednesday MK it's EMH till 10 ( I love MK at night)
Thursday AK
Friday back to MK. It's morning EMH, but will it be all that crowded this time of the year?
Last time we went we did MK on a Sunday, open till almost close at 10.
Kids are 9 and 12 and we're total commandoes last time lol

who say mind day is people first day ( any day can be your first day) and people that are local or only live a few hours away can go for the day.

disney should not be that crowded that time of year ( or compared to 4 of july new years eve christmas)

so you should have a good time.
