Will this FP plan work for a busy week in February?

Despite getting on the computer precisely at 7:00 am on the day our fastpass window opened, I wasn't able to get fastpasses for the newer and more popular attractions until afternoon (our earliest fastpass is around 4:00-ish) for our trip in 2 weeks. My plan is to hit rope drop, ride what we can without fastpass, and then head back to Fort Wilderness around 11 for lunch at our RV. It's our first stay at Fort Wilderness so we wanted some time to explore and relax there anyway. We plan to head back to the parks in the afternoon, around 3 or 4, use our fastpasses and eat dinner. We might stay for fireworks/night shows depending on how tired we are. Does this sound like a reasonable plan? Should I keep trying to switch our fastpasses to earlier times? I haven't had any luck so far with that.
 
Sure, that'll work if you want to. Plenty of people do that. We don't, we're not fans of the "mid day break" thing, but that's just us.

No point in trying to modify it now, your odds are very slim. Modify it the night before or the morning of and there's a very high chance you'll be able to move them to the morning if you want.
 
I’ll be there in 2 weeks as well. I booked at 30 days and although I didn’t get SDD, Minetrain or FoP, I did get some good ones. There were 2 FPs that I didn’t get the times I wanted but check several times a day (ok, I checked dozens of times a day) and eventually found the exact times I needed (FEA & TSM). But your back up plan sounds good to me.
 
Rope Dropping in the morning and utilizing fast passes for the afternoon is a great way hit up the rides. The one downside is you can't get your 4th, 5th, etc. fast pass until later, and your window for switching around stuff is smaller. But I don't see any issues with your plan, you should be able to get done whatever you wanted.

Don't obsess over it, but if important to you, try to move some of them up on the day you are at the park.
