Will the Edison be on the Disney Dining Plan?

Pretty much my whole question, other than will it be a signature or not.

Probably. However, it is not Disney-owned, and those restaurants negotiate contracts in December. Due to the open date expected, it may be that Edison will not be on DDP at open, and will negotiate contract after opening.
