I might need to arrive on the 29th instead of the 25th but I will not know until after I have booked my FP. Will I lose all of them? Or just the ones from the 25th - 28th?

You can re-book the days that you are not going to be there, if you like.
Cancel the ones on the days that you will not be there, and make new ones on days LATER (if you are moving your trip days later in the week.)
Or, just let the ones on the days you are not there expire, unused, and just start using the remainder on the day that you DO arrive.

I recently cancelled the first day of our upcoming trip and I was terrified that dropping 1 park day would make all our or FP+'s disappear.
As a precautionary I went in and deleted the FP+'s for that first day before I called and modified the reservation. I was relieved (and a bit surprised) there were no issues when I dropped that first park day.
