Good Morning, All!

T.Bob, thank you for the photo! What an incredible group! It will be the centerpiece of my scrapbook :-)

I made some more copies of the Christmas card - next year, I guess I'll have to order 100.

No snow yet up here in the northeast. I would have liked a white Christmas - and t hen for it to go away the day after. Bruce, on the other hand, would like it to start and not stop.

Morning all,
we have a beautiful sunny morning, with rain on its way this weekend, which is great since we didnt get rain all summer which is our rainy season.
I am happy we dont live in Denver, just saw pictures of their snow storm!!!
I love snow, but not that much.

I am feeling a little better today, Bill the monkey must of helped!!!

Got to go to the bank and pharmacy this morning before the roads get too crazy :crazy: with holiday traffic.

Actually, I believe we could qualify for some kind of group discount. Would be interesting to find out!

Here's a new recipe:

Jen's Orange-Pumpkin Roll
Pumpkin, packed with vitamin A, proves it has a life after Thanksgiving.

Serves 10
Canola-oil cooking spray
Parchment paper
3/4 cup all-purpose flour
1 1/2 tsp cinnamon
1 tsp baking powder
1/2 tsp freshly grated nutmeg
1/2 tsp ground ginger
1/4 tsp salt
3 large eggs
3/4 cup sugar
2/3 cup pumpkin puree
2 tsp grated orange zest
1 tsp vanilla extract
3/4 cup finely chopped pecans
2/3 cup confectioners' sugar, plus extra for dusting
1 tsp gelatin
1 cup lowfat ricotta cheese
6 oz lowfat cream cheese
1 tbsp finely minced candied orange peel

Heat oven to 375°. Coat a 12" x 15" x 1" jelly-roll pan with cooking spray. Line with parchment paper; coat with cooking spray. Whisk flour, cinnamon, baking powder, nutmeg, ginger and salt in a bowl. In another bowl, beat eggs with an electric mixer on high until fluffy. Gradually beat in sugar until combined. Reduce speed to low; add pumpkin, zest and vanilla until just combined. Gently but thoroughly fold in flour mixture. Pour batter into prepared pan. Spread into an even layer. Sprinkle pecans on top. Bake 10 to 12 minutes or until toothpick inserted in center comes out clean. Lightly dust a clean towel with confectioners' sugar. Remove cake from oven. Invert cake onto towel. Remove pan. Gently peel off top parchment. Tightly roll up cake in towel, starting on long side closest to you. Place seam side down on a rack. Place gelatin and 1 tbsp cold water in a heatproof bowl; place bowl in pan of hot water to melt gelatin. In another bowl, beat ricotta, cream cheese and confectioners' sugar with an electric mixer on medium until smooth. Beat in gelatin and candied peel. Cover; refrigerate at least 1 hour. Gently unroll cake; set towel aside. Spread top with even layer of filling, leaving a 1-inch border on the far side. Gently roll up cake. Place seam side down on a platter. Refrigerate until ready to serve, covered loosely with plastic wrap. Before serving, trim cake by diagonally cutting thin slice off each end. Dust with confectioners' sugar.

The skinny 275 calories per serving, 12 g fat (3.7 g saturated), 35 g carbs, 1.9 g fiber, 8.7 g protein

She got it from "shape" magazine and it was SOOOOOOOOOO good - not disgustingly pumpkiny but just right!

I wanted to pop in and say what a wonderful time we had on our cruise. I miss it so much already. I was not able to go to the meet (our 4 kids going every which way made it hard), but I met Kathy and her husband :wave: , and saw and recognized alot of people from their photos--I was just too shy, and didn't think anyone would know me. I sat right behind Woogal and cruisemutt a few times at the adult shows...weren't they funny? We loved the entertainment that cruise.... :teeth:

To answer your question about the group booking, I am a travel agent, and have looked into DCL groups before. Basically, they give you $100 credit for each room, and a group gift per room for groups of 8 staterooms or larger. The only problem is that if you rebooked on board, that deal of $200 stateroom credit is much better, so it cancels the group one out. Alot of times the TA throws in a few extra incentives, and sometimes has a bonus from the group booking that can be split up amongst the rooms. HTH!

Sorry I did not get to write yesterday. Yesterday was a nightmare for me!! DS was terrible and I just could not make him happy. Today in the morning he was unhappy but he seems fine now. He is back trying to get into everything. Tomorrow I am going to get all my cold cuts and last minute things for Christmas. Well I have to get dinner ready because DH left early today. Okay talk to you all later :wave2: :wave2: :wave2: !!!

it was fun meeting you and I did watch for you at the meet, wish you would of come! People wernt as mean as you might of heard :lmao: , accept Mutt, he did bite a couple of people :rotfl2: . But Shell said he has had his shots so no worries!
All kidding aside I did look for you several times after we met and a couple of people did ask me if I had seen you because they hadnt got to meet you yet.
Hopefully our paths will cross again someday. I will help you get over your shyness. I use to be very shy too.
Did any of your family get ill?? I hope not, but many of us did.

Hope everyone had a good day.

I did all my errands so I shouldnt have to leave the house again until after Christmas. Thank goodness.
