Why don't people make ADR's?

When dh and I first went to Disney we only made adr's for Crt and Victoria and Alberts. I thought those were the only ones you were supposed to.
Well on that trip we had no problems getting into other restaurants, but we were in off-season and we were flexible about times.
Still, I've ALWAYS made sure to have adrs after that, I am one of those people who need to know where I am going every day.
