I got a whole chicken, now I'm not sure what to do with it. I know I can throw it in the oven for an hour or so but I'd like to do something in the crockpot.

Any suggestions?

I've put a whole chicken in the crock pot when I'm going to be out and want the main course finished by the time I get home.

For minimal prep, I throw the whole chicken in the crockpot w/ either some chicken stock or white wine, poultry seasoning & whatever spices sound tasty.

You could also throw it in w/ some onion, garlic & lemon wedges and your spices.

This is the recipe that we love. The chicken comes out so moist. The only thing different than cooking it in the oven is the skin does not crisp.

Crockpot "Roaster" Chicken

1 large roaster

Dry Rub
***This rub is awesome. I think I will use it all the time for roast chicken!
4 tsp salt
2 tsp paprika
1 tsp cayenne pepper
1 tsp onion powder
1 tsp black pepper
1 tsp thyme
1/2 tsp garlic powder

1 med onion, peeled and quartered
1/2 cup cooking sherry or chicken broth
2 TBS butter
2 heaping TBS cornstarch mixed with water to thicken gravy

Mix rub ingredients.

Remove inards from chicken and wash and dry. Sprinkle rub inside and out of bird and under the skin. Place in a large ziploc and marinate in fridge for at least 2 hours, overnight is better.

Place a rack in the crockpot (if you do not have one, cut veggies can be used or make a rack using crumpled tin foil...this is to keep chicken higher than juices).

Add butter and sherry to pot. Stuff bird with onion and place on rack. Cover and cook on low for 8 - 10 hours (my pot cooks fast so it only needed about 7 hours...meat thermometer should read 170 - 180).

Remove chicken to cutting board and let rest about 10 minutes.

Strain juices into a sauce pot and bring to a boil. Stir in cornstarch/water and keeping stirring until thickened.

Remove skin from chicken and carve.

I used to buy the McCormick's Rotisserie Chicken Spice Mix and cover the chicken in that and put it in the crockpot. It was pretty good although you won't a crispy skin on the chicken.

That's how I always do mine. It's so good. No need to add any liquid, there is always a ton of juices!

This sounds easy! Could I put it on top of cut potatoes, carrots and onion and eat the veggies with the chicken? Or would the veggies be gross?

You probably could. It's not a really strong flavor but it is kind of dark red/brown. I wouldn't go too crazy with it.

I've put a whole chicken in a crockpot before. It's basically a baked chicken without the golden brown skin (that part I miss) but it's really good that way.

I'll have to try some of the things suggested on this thread!

The only problem with cooking a chicken (any chicken) with bones in the crockpot is that the meat will fall off the bone, and sometimes it is hard to get all the bones (they sometimes start to disintegrate).

I like to roast mine in the oven...we eat some and I save the leftovers to make another meal with.

I use the same rub as Fmrcastmbr, let "marinate overnight", and roast in a low oven (I think it was 250 for five hours or something like that). It is DELICIOUS!

lemon butter crockpot chicken..... put in whole chicken, stuff slices of lemon in and around, add a whole stick of butter, chunked up-salt,pepper,drizzle of evoo.....at end of day, it is SO good!
I invented this dish when I had a bunch of lemons to use up once.....I have also substituted oranges for the lemons......
the family loves this! with leftovers, boil the carcass, strain, and make soup with the clear broth later!
