First thing is heights. How tall are the kids? That's going to limit some rides right off the top.
Take a look at: Nemo Subs, Small World, Casey Jr, Storybook Canal, Tiki Room, Jungle Cruise, Pirates, Mark Twain, Railroad, Tarzan Treehouse, Tom Sawyer Island, all have open/flexible seating that'll accommodate groups of 5.
Winnie the Pooh seats 6 to a vehicle, and if you can sit 3 to a row and split into 2 rows then all 5 of you should also be fine on: Snow White, Pinocchio, Alice.
If height is OK, then Thunder Mountain will work if you can split into two rows.
On some rides - specifically Matterhorn & Splash Mountain - an adult may be required to sit behind each kid under 6, so those might not necessarily work for you (for example, I can't ride with both my kids on Matterhorn at the same time even though they both meet the height requirement). But if the 3 yos don't meet the height requirement anyway, then it's not an issue.
