As far as I know, only CRT requires prepayment. Special events like the dessert parties do too last I knew. But we have eaten at BOG & Space & most other signature places & they do not require prepayment. I know California Grill has a new prix fixe menu but I haven’t read that requires prepay either.

The two dinner shows - Hoop De Doo Revue and the Aloha Luau - required payment when reservations were made. However, neither of them has come back yet, and there are reports that the Luau won't return at all.

CRT is currently the only meal that requires full payment ahead of time. There are certain tables at Wine Bar George that require a large deposit but not the full payment.

I booked a table for 10 this August and apparently any party of 8 or larger is booked as an official "large party" directly through the restaurant. If you cancel within 24 hours of your reservation it is a $20 per person charge instead of Disney's standard $10pp. I was told on the weekends their 'large parties' have a minimum bill they have to meet but not on weeknights. If you want to book their 'library' which is a table for 10 (it isn't even a private room, in pictures it looks more like an alcove) that requires a minimum bill of $750 on weeknights (not including tax and 18% tip). You give your credit card and sign a contract through docusign. My sister's flight wound up getting rescheduled a week before the vacation from a 10am to a 2pm arrival (we made the reservation on her arrival day for 5pm). They were booked up that night so we couldn't make the reservation any later. We sadly cancelled the reservation instead of worrying about rushing from the airport to Disney Springs for our early dinner. We were really looking forward to eating there but we'll go back another time.
