Other than V&A, I don't think there are any tasting menus. There are some prix-fixe menus, but they are just app/entree/dessert with limited choices and not a real chef's tasting menu. I'll often do a DIY tasting menu at a signature restaurant (usually a cold appetizer, soup or salad, hot appetizer, cheese course and/or dessert).
I don't know if they'll do it at WDW signatures, but at other fine-dining places (including Napa Rose at Disneyland), my dining companion and I will order 2 entrees but have then split them and course them out. We'll usually get 2 appetizers and either have the house split them or just serve them family style, followed by a seafood entree which is split and plated in the kitchen, followed by a meat entree done the same way.
