Which restaurant would you choose for a signature meal?

We are very tentatively planning a trip at the end of March/early April. This would be more of a budget trip (driving down/staying offsite/no ddp etc). However, we would still like to treat ourselves to one special dinner. We've eaten at Narcoosee's, Citrico's and California Grill in the past. We would like to try something new. Which one of the following would you recommend and why?

Jiko
Flying Fish
Yactsman
Artist Point

Flying Fish. Best food of that group.
But if you want even BETTER choices, try Shula's or Blue Zoo.
 
Out of your list, we've only eaten at Yachtsmans....and it was very good!! BUT...after reading many reviews on Flying Fish and Jikos, it looks like they might be a better choice. Those two restaurants are on our "to do" list. What about Victoria's and Albert's?? We finally decided to bite the bullet and do this on our next trip...I know it's pricey, but supposed to be a wonderful dining experience...just a thought.
 

Flying Fish! We have dined there three times and each time it was fantastic! DH always gets the NY Strip, he said it is the best he ever had. I have tried the scallops, red snapper and the shrimp and each dish was excellent!
 
Flying Fish is our favorite. We have never been disappointed. The seafood choices are the most delicious of any we have ever had. Service is very good and it is a beautiful restaurant.
 
After California Grill, Artist Point is my family's favorite.
 
We have had two of our best meals ever at Disney at Artist Point. I like it better than California Grill.

I haven't eaten at any of the others, but I think my mom panned Flying Fish.
 
Jiko. Hands down. You can walk around AKL afterwards which makes it even better.
 
We think Flying Fish is the best of your choices; Jiko would be second. Artist Point and Yachtsman would tie in third-I like them less than Citricos and Ca Grill but better than Narcoosees.
