Which parks which days?

Hi all - I've been scrounging Easy WDW and Touring Plans to try to narrow down our park days. Very tentatively we're planning on 6/23-6/25 (Thursday through Saturday) this summer. Our volleyball tourney ends on Wednesday 6/22. (so could maybe do an evening, but probably not). We were thinking one day to cover the HP stuff at Universal, and two days of Disney - Epcot and MK. In my perfect world we'd start with Universal, then Epcot, then MK. However, I'm trying to minimize crowds. We will almost certainly be off site. Touring plans has all three days the same level at the Universal parks, so I'm thinking we pick the best for the other two and whatever is left is Universal. Of course the two sites differ. Easy WDW has MK most recommended on 23rd and Epcot on 24th. Could do that and then finish with Universal maybe? What do you all think? How bad would the Saturday be at Universal? Or the HP parts anyway - that's all my kids even care about. How has everyone's crowd calendar predictions meshed with reality on each of these sites? I've only really used Touring Plans before and I like it, but I know a lot of you prefer Easy WDW.
