Which park?

I have a bit of a conundrum.

I'm going to WDW 1/28-2/04. I do not have park hopper tickets, so I'm picking one park per day (no, not changing my mind, this is how we roll at WDW :)). I have every park day picked out but a couple and I'm unsure what to do.

On 1/29 (Monday), I was planning on AK. Kenny the Pirate has this as a red day at AK. TP rates this as a 5. I could switch it out for Epcot, which I was planning to do on 1/30. Epcot is a green park on 1/29 according to KTP (a 4 according to TP) and AK is a yellow park on 1/30, but I was hoping to utilize evening EMH at Epcot on 1/30. TP has Epcot and AK both as a 3 on 1/30.

So, what would you do? Forget about the EMH in Epcot and switch the days out to hopefully avoid the crowds or just throw caution to the wind and possibly go to AK on a day when it'll be busier? I'd also have to try to switch around some ADRs, but I'm confident I could do it. What do you all think I should do? I'm pretty stumped here.
 
Generally the park with EMH in the evening becomes the most busy park. Many people including myself dont buy Park Hoppers. I stay at the park the entire day.

Id avoid the EMH at Epcot and do the AK day.
 
Skip the EMH at Epcot & head to the park where crowds are predicted to be lower.
Several days of less impactful crowds beats that EMH imo. Plus, it sounds like this is not your first time at WDW. Not sure if you agree, but I think Epcot is really limited in what it has to offer right now & you can see everything without that EMH.
I already like that you do not go for park hoppers. I think committing to 1 park is the way to go too!

EPCOT I never get bored of. Only park with limited stuff to do is Hollywood Studios.

29: MK (4)
30: AK (3)
31: HS (2)
1: EP (2)
2: AK (3)
3: MK (7, yuck)

I think the only EMH we are going for Epcot on the first and MK on the third. Our goal is always low crowds with the exception of MK on the 29th, just because we always start our trips there.

I would do AK as late in your trip as you can. So if you can do Epcot first, I would do that. I guess it depends if you want to ride the Avatar rides or not.

I'm going to AK twice, once at the beginning, the other at the end.

Oh okay. I think it depends on how long you plan on staying in the park. We like to go at RD and stay until park closing, but we don't have kids so it's manageable for us.
