Which Park - Which Day?

We will be there from Sunday, May 30th (arriving 4 pm) and leaving Friday, June 4th (around noon). Since Monday is Memorial Day, which parks would you go to and when (it's just me, DH and 5 yo DS)? My thought is:

Arrive on Sunday - PS Chef Mickey's for dinner - no parks
Monday - Epcot
Tuesday - MK
Wednesday - Animal Kingdom
Thursday - MGM

Thanks. Any other advice VERY Welcome - this whole planning thing is a bit overwhelming!!!

That sounds good.

Don't be afraid to switch parks part way through the day if it's too crowded.

I left AK once because it was too crowded and went over to MGM.

It was worth the time it took to change parks, I went on Tower of Terror three times in a row.
