Which park to get FP+ for?

Not exactly sure which park I would be best to get fast passes for..(2 days w/ph) here is our schedule:

D1:
HS (EMH 8am) *leave mid-afternoon*
[we'd be there before rope drop, so I feel like fast passes may be pointless for an early morning with EMH, considering we'd be able to walk on.. thoughts?]

EP *stay until close*
[only planning on doing test track, spaceship earth & sorin' (we're more there to walk around the world) but I'm not sure if you can get fast passes for just TT & SE.]

D2:
AK *leave mid-afternoon*
[also here for rope drop, plan on doing everest, dinosaur, safari & kali...no shows.]

MK *until close*
[we have MVMCP tickets.. so we'd be sort of doing "EMH" from 7pm until 12am. this is where I'm not sure if its worth it to get fast passes, because I've heard that you generally can walk on rides during the parties, please correct me if I'm wrong!]

Any help is appreciated! In the process of setting our plans in stone, so trying to have everything ready once we can book FP+. Thanks in advance!

You are required to pre-book THREE FP+ (no less, no more.)

So, if you just want to use TWO, book the third FP+ for any other available attraction, and just don't use that FP+.

1. You cannot book or use FP+ DURING the party time.
But, you can book and use FP+ at MK up until the party begins at 7PM.

2. That is generally true, especially for attractions that are not normally in super-high demand.

Not sure if you are all adults and can use single rider line or if little ones involved but assuming everyone is old enough for SR line...

Just my opinion, I would...

Day 1 - if you're sure that you'll be at rope drop and can get to your priorities early, save your FP's for EP, specifically Soarin and SE. You can ride TT with single rider line if the wait is too long. Save RnRC for last at HS and use SR line there.

Day 2 - save your FP for MK (must be used before the party starts at 7). You can ride safari right at RD then head to kali then dino and if necessary use SR line for EE. That way if MK Is crowded before the party starts, you'll be able to ride a few headliners when you arrive. I would use it for 7DMT as my understanding is there will still be a wait for that one during the party. We will be doing exactly this on our AK/MVMCP day.
 
On your HS day you can definitely get in RnR and ToT right at rope drop with no wait - just head right there. And then when you are done go right to Toy Story and there will be a bit of a wait but nothing too terrible. Other than those 3 things you should be fine there. I'd definitely get them at Epcot.

For day two I'd go right to Everest at Rope Drop and get the Fast Passes for MK. Probably Space Mountain and Mine Train and Peter Pan. Those seem to be the worst. We were recently there for late hours until 2am in July and the wait for Mine Train was still at 35-40 even after midnight. Which isn't terrible but still longer than you'd think. As for the Christmas Party, I thought the crowds were awful when we did it and didn't notice any difference in wait times. Granted it's been 6 yrs but unless you want to maybe miss the show and Wishes...which I could see the lines being slightly less then...I wouldn't count on being able to walk on rides or anything.
