Which park on Sunday?

Hi! I'm heading to DW on Saturday for my 25th anniversary. I made all the plans months ago so of course now I'm rethinking them. Our park days are Sunday through Wednesday and we are going to each park once. Which park should I choose for Sunday just based on crowds lately? I had originally chosen EPCOT, but it's my favorite park and I don't want it to be crazy crowded because it's a weekend. Which park should I choose instead? What order would you do? My original plan was:
Sunday-EPCOT
Monday-AK
Tuesday-DHS
Wednesday-MK
All parks are still wide open for reservations. Should I change my order? I've been going to Disney forever and I feel like a newbie! (

I don't think it will make much of a difference which order you go. DHS does tend to hit capacity most days, so some folks are doing DHS on the weekends to take advantage of slower weekdays in the other parks. Epcot is busier on the weekends, but when I've been on Sundays, I didn't think it was crazy crowded.

You could swap AK and Epcot. Only downside to Monday Epcot is that some of the food and wine booths won't be open.
