Which of these 3 weeks would you choose?

I would avoid the last one of your choices. Could possibly be the start or Halloween and if you are talking about 2022 it's d23 weekend
 
We are scheduled for Aug 23-27, but after booking I had a tiny twinge of remorse for Aug 28-Sep1, as it could be a sweet spot in terms of crowds. I agree with Katy on avoiding the 3rd choice!
 

The middle dates, Aug 28-sept 1 look promising for the thinned out crowds if a lot of CA back to school days…

My daughter started august 28th this year and starts august 25th in the fall
 
I would go with option 1 but I would check if Haunted Mansion is going down to be converted to the Nightmare Before Christmas overlay at that time. I would avoid all holidays.
 
Middle week for lowest crowds. The first week is going to be the last week for people who bought Magic Keys on day 1. I imagine a lot of people aren't renewing so they'll take one last trip that week. Disneyland reservations for Magic Keys that week are already 100% gone and DCA reservations are also gone for all but 3 days. The last week has Labor Day which would elevate crowds. If Halloween starts that week, it'll further increase crowds but could mean more activities for you to do.
 
August 21 - 26 range for us. We've gone in this period many times. Most schools are back, crowds are lower.
 
Pre-pandemic the week after Labor Day was he quietest we had seen the park in all our trips since all the local schools were back in session. You’ll also be there for the first day of Halloween that Friday too.
