Which night to do Palo?

Our first cruise was a three day Wonder, and we never made it to Palo's. When we cruise on the Western Magic next year we don't want to miss the Palo experience. We have learned that DD and DS will be well taken care of and truth be told, they probably won't miss us for one dinner. Question, any opinions as to which night ( if any ) may be better than another to make a res at Palo's ?

For the Western, we chose Sunday, the night we were in Key West (we had APL rotation so we didn't miss the show). We made 6:00 reservations hoping to see the sunset from Palo's, but it set about 5:52 that night - it was still a wonderful experience!
 
Another option for some is to double-dip.

We don't want to miss any of our dinner rotation so we're going to do the earliest possible dinner at Palo's so we can still dine w/DD at 8:30.
 
We decided to go to Palo on the semi-formal night. The only reason behind that was we would need to take one less set of "dressy" clothes.

It worked just fine and don't think we missed anything.

AKB, Great minds think alike. We are also doing Palo on Tuesday night. Does anyone know when the first and the last PS for Palo's?
 
We skip Palo for dinner, but never for brunch. We make sure that we don't do the brunch on the same day as our character breakfast.

In reality, the ONLY thing I miss about not going to Palo for dinner is the souflee. I understand that they are wonderful.
