Which hotel to stay that offers....

Breakfast and shuttles to the parks? We will be staying at hotel up to 2 weeks.

Hilton Bonnet Creek offers free breakfast coupons to Gold and Diamond Hilton Honors members and shares a free shuttle to the parks with the Waldorf Astoria next door. The Waldorf offers the same free shuttle but does not comp breakfasts to HH status members.

There are so many! Holiday Inn Disney Springs, Extended Stay America Lake Buena Vista, Homewood Suites Lake Buena Vista, Comfort Inn, etc. just to name a few. You should start researching hotels around the WDW area!

Also, the Galleria Palms is a great choice. It's the WDW West Gate area, has a decent breakfast, free scheduled shuttle, is affordable, & is so close you can see Animal Kingdom & the fireworks!

I stayed at the Holiday Inn Disney Springs and paid around 120 a night on 01/02/2016 which was a high rate weekend. Got free breakfast for 3 adults and 2 kids, no resort fees and free parking. (the resort and parking really adds alot per night so always figure that into your cost). I booked it thru sunshine rewards which like a ebates for Disney Fans via gives you disney gift cards directly thru the Holiday Inn website that they linked too. It was cheaper than all the expedias and so forth.

They offer the free disney buses and so forth, we drove since we have annual passes with free parking at Disney Parks. But they offer the best bus option as they do the Disney Springs resort loop and are alot better than other off site buses.

Oh you have to look for free breakfast under Hotel Packages, it ups the rate but not by much and is worth it as its a buffet.

For sure check all the http://disneyspringshotels.com/ as that will be your best shuttle option.

I know we have booked Doubletree via Mousesavers that came with a free continental breakfast.

You will find lots offsite that include breakfast ... and have a shuttle but check for regularity, if reservations are needed and fees.
