Which EPCOT restaurants can you view Illuminations?

The linked article is comprehensive and offers good tips. However I will repeat a couple for emphasis. Getting a table with a view is not guaranteed. And when the resorts are busy they will frequently not take requests at all. So consider whether not being able to see the show is a deal breaker. If seeing the show is important, its better to eat at your favourite restaurant earlier and then find an unobstructed slot on the Promenade.

Had the pleasure of watching the fireworks a few years back from Nine Dragons. Just book your reservation for 8:30PM and ask to be seated near the window if possible. Nothing is guaranteed but the restaurant was pretty empty when we were there. Good luck!

I would add that Rose & Crown has a reserved viewing area to the left of the restaurant (when facing the lagoon) for guests that do not have a table with a good view of IllumiNations. I would also second minnie mum's caveats that you can't be guaranteed you'll get a table with a view (regardless of which restaurant you select) and very few have reserved/alternate viewing locations for guests if they don't get a good table. Seeing IllumiNations while dining is like getting pixie dusted...it's wonderful if it happens, but it cannot be counted on and would be best to expect that you won't get a table with a good view.

We saw Illuminations at Rose & Crown a few years ago and it was really good. We showed up and were seated around 7:30pm to see the show that started at 9pm. Our table was right on the lake so we got a perfect view of everything, and our waitress was very good. I'd definitely recommend the Rose & Crown for watching the fireworks! Although make sure you reserve a table in advance.

It's one of those things where it works well...until it doesn't. For example, we'd always had OK-to-great views at Hacienda, but on our trip last month they stuck DW & me at a back table where we had absolutely no view at all. Since we came there for Illuminations viewing and weren't going to see any of it, we ordered a couple of apps, ate quickly and got out of there to grab a view outside. We knew the risk--happened to come up snake eyes for us that time.
