I would agree with either AKL or the YC/BC for reasons above.

Another option would be a Bonnet Creek resort.

Our absolute favorite is AKL. Favorite place to be in the world. And Boma is our favorite restaurant

Saratoga Springs has be our least favorite Disney resort. We've stayed all 3 levels at Disney, and I would choose a value over Saratoga. All Star Music was actually a surprising love for us. We moved there when we were stuck in town a few days after Hurricane Matthew and it was awesome.

I am curious what you didn't like about Saratoga Springs. I've never stayed there and I can see why it's no one's favorite but the rooms do look nice.

Normally I would suggest one of the Epcot resorts and if pool time was important then the BC or YC. But the real value of the Epcot resorts is the proximity to the two parks.

Since the parks aren't part of your time then I would opt for either the Poly or the GF.

The MK resorts are our favorite but if not doing parks I'd go Yacht/Beach. Great pool and lots of fun activities as well as food options.

Good swimming and good dining.
