which day is better?

We will be at Disneyland Resort May 6th & 7th.
Wondering which day we should do each park for these days?
Which option would provide lower crowds for us?

Disneyland - Sunday
California Adventure - Monday

or

California Adventure - Sunday
Disneyland - Monday
 
Why not do Park Hoppers
Totally agree. If I had 2 park days, I'd want to do 75% of my time in DL. Half and half would leave me wanting more time in DL.

OP, I see you've been to WDW quite a bit. So have we. This is completely different when it comes to planning park days. We never get hoppers at WDW but always do at DL. The entrances are right across the esplanade from each other so hopping is fast and requires no outside transportation.
 

We have 4 day park hoppers but want to dedicate our first two days to their own park. Like to know which park would be better for each of those days. We already plan to park hop the last two days of our ticket.
 
Right now with the construction on PP, you might be hard pressed to spend a whole day in DCA and not want to leave to go to DL. Personally when we bring out of town family we always go to DL first, because that’s where the magic is for us and the kids would die if we kept them from if!

All those folks who worked the weekend, all those folks putting in their last day of Disneyland before leaving, all those folks coming after work on Monday to get a lift for the rest of the week, all those folks making it the first day of their 5 day visit,(avoiding the weekends because it is busy)....at least those are the reasons i have gathered to explain why Monday is so busy but Wednesday no so much

I have not really noticed as dramatic a difference between Monday and Wednesday over the last maybe 5 years, but since DL is such a large locals park Sunday’s are really crowded. Even more so if it is a week where deluxe passes were blocked out On Saturday. I would expect Sunday to be worse than Monday but I’d still go to DL on day 1 of our trip, especially if I had 4 days and hoppers.
 
Sunday has always been better than Monday on our trips. Then Tuesday is quiet and Friday it’s busy again. We go annually at various times of year.
 
So it looks like more are saying to do:
Disneyland on Sunday
California Adventure on Monday
 
Are you staying on site or off site? If you are staying on site I would do DCA Sunday and use the EMH for the early entry. If you aren't staying on site, I would do DL and go at rope drop.

Also, I understand your desire to dedicate a whole day to each park upfront, but that may not turn out to be the best plan in practicality. Sunday mornings at DL are usually very nice, but by mid-afternoon, it can get very crowded and we usually hop over to DCA to avoid the “shuffling in a herd of humanity” thing that happens on DL’s smaller walkways. It’s possible that it won’t fill up, but if it does, I’d be prepared to head to DCA, where there’s more breathing room.
 
I would do CA first then DL second. Plus, you might end park hopping on one of the days.
 
I would do DL on Sunday for chance to see Fireworks or/and Fantasmic. Neither are showing during the week. Paint the night in DCA is planned all week based on dining reservations. I'll be there the same time as you May 4th - 8th. I plan on doing Disneyland Friday the 4th (arrival day) then I'll park hop Saturday & Sunday but I'll be back in Disneyland in the evening for the chance at Fireworks. I plan to watch Paint the night MOnday & Tuesday evening.

Fireworks are listed for every day of the week at DL in May (it only shows until the 15th so far).
