Basically you have Liberty Tree Tavern left inside the park as far as table service. Lunch has a decent variety, dinner is an all you can eat meal (not buffet but family style) that is similar to a Thanksgiving dinner (turkey, dressing, etc).
Your other options are counter service or eating at one of the monorail resorts.
We enjoy Columbia Harbor House (fish, chicken, shrimp, salads) or Pecos Bills (burgers, salads, fixings bar). There are several other places as well.

Since you have almost all table service, if you would like to do a counter service, Cosmic Rays is a great option. They have a large selection of food items, we also love Harbor house and Pinnocchio's.
We really like LTT for lunch. In fact this trip we ended up canceling the plaza to go back a second time. Their salad is great and it's a nice break in AC and away from the lines of CS. We found it to be very quick service and we were in and out in less than 45 minutes. The ooey good toffee cake and the apple crisp are AMAZING!

Just wanted to say that my group had some of the best service EVER at the Plaza for lunch at the end of January. It was cool and the chef took great care of us - (2 adults, a preschooler and a very active baby!)
It was a great respite on a warm day....
