I would have some sort of plan in place due to late flight times, or any delays you might encounter along the way... You might not have a choice but to eat in the airport...
There are places like Grub Hub, and Uber Eats that will deliver to the lobby... again time is important... You might want to check out what some of your options might be, along with closing hours....
Room service is always a good choice, while not extremely varied you will be able to get something to eat.
If you are using Uber or Lyft, private car service, you might be able to see if they will take you through a fast food drive thru... we have done it a few times... Offer to by the driver a meal, and a little extra in the tip... and we were good to go... Another thought... You might want to think about ordering somewhere once you land and can see in real time where you are at time wise, like Olive garden or Chili's, Macaroni Grill - to go, and ask the driver to swing in so you can run in a get it or they bring it out to you...
Disney Spring has lots of new restaurants, and you might be able to get something to eat there..., spend sometime checking out the closing times, and menu offerings, as well some of the restaurants main dining area's close but have the bars still open with a limited menu...
