Where should we spend New Years?

After spending NY 99/00 at WDW, I *know* we'll never do that again (we're not crowd people). We're not drinkers and don't always even stay up until midnight, so that's not a factor! We're going to be spending the 27-28th at Universal, and the 1-4 at WDW. So, on the 29-31 we have to choose which day to do Seaworld, Discovery Cove, and then either a day at the beach or one more at Universal. I'm leaning slightly toward DC on New Years, because of the limited numbers and because it's the one really big expensive extra that we're doing on this trip. If we choose to do that, does anyone know of a nice restaurant to have supper at? (We're staying at HIFS those days.)
