where can I take a vegetarian for my birthday dinner?

I'm going to be at DL for a week during my birthday with a friend that is vegetarian. I would like to make a dinner reservation but I would like to get some feed back from some folks on what they have enjoyed and where. I have been to Disney plenty of times but with my hubby and kids and we all eat meat. she has ate at BB and didn't enjoy the vegetarian option there, so I don't want to take her to some place with a yucky over priced meal just because I like it.
 
One of our favorite places is Ralph Brennan's Jazz Kitchen in DTD. They have a vegan/vegetarian menu that my cousin always orders off of and she loves it! You just have to ask for it when you check in.
 
The vegan burger at Carnation was just alright to me. I added real cheese, which helped. Cafe Orleans has. 3 cheese monte cristo and good salad. Catal also has some salad and appetizer combos that are good. You can also check lounge menus. Most have a flatbread that can be made vegetarian. Offsite check the menus for PF Chang's, Roy's and McCormick & Schmick. I also like Benihana, which is further away, and I haven't been, but I've heard Fire & Ice is good.
 
I'm a vegetarian and I have been to the parks plenty of times. I love Wine Country Trattoria. They have a great minestrone soup and caprese salad. I have also eaten at Goofys Kitchen which is a buffet with options for everyone. Cafe Orleans has a vegetarian ragout that pretty good.
 

I'm a fellow vegetarian. The veggie tacos at Rancho del Zocalo are very good. Highly recommended. Also, in another thread about Blue Bayou, someone asked a similar question. I've eaten there three or four times. They'll definitely make your friend something nice. And you can't beat the atmosphere. A lunch/dinner will set you back approx. $30 per person (more with drinks and desert).

According to allears.net, Carthay Circle has some options for vegetarians. On their dinner menu, for example:

Since you mentioned vegetarian and not vegan, I'll assume that your friend is ok with eating dairy products & eggs.
 
Carthay Circle is my husband's favorite, but it's $$$. He didn't care for the veggie burger at Carnation Cafe and thought the veggie option at Blue Bayou was ridiculously overpriced and bland - he's tried both the mushroom risotto and the "can the chef make me something?" which was basically pasta primavera. Wine Country Trattoria was fine but nothing special. The cheese Monte Cristo at Cafe Orleans was good, but it's a sweet entree (powdered sugar and berry puree) not savory, which some people may not care for for dinner.
 
It depends on how much you want to spend. If you're going very fancy, go for the chef's counter at Napa Rose. Get the tasting menu (gulp-- $100 apiece, I believe?) and the chefs will make you something AMAZING no matter what your restrictions are. We are gluten free due to intolerance and they will specially make things for you that are wonderful and innovative.

That has always been the excuse given as to why there's not been a vegetarian entree on the menu, but if you look at the current dinner menu on Disney's site, there is one now. It's not the one above (the menu on allears is 17 months old). Maybe they finally realized that not having something listed turns people away, rather than people figuring out on their own to make a reservation and ask to be accommodated once they're there.

Interesting, we've been several times (the oldest probably a year ago), and there's always one (and only one) vegetarian option at dinner. They do seem to change it every few months (seasonally?).
