you can book them now. The window is just opening up for December trips. If you want Le Cellier for dinner or maybe even lunch you may be entirely out of luck though.
Disney takes reservations for dining 180 days prior to the date you are requesting. Actually most October vacationers have already made their ADR's. I'm sure you will find availability at your favorites, just be flexible.

To be honest, I find it hard to believe that most October vacationers have made their ADR´s. First of all, there are a lot of vacationers who don´t make ADR´s at all and secondly, very many vacationers haven´t even decided yet they´re going to Disney in October. Although most of us on the Dis make our ADR´s 180 days in advance I find it hard to believe that this applies to the majority of Disney travellers.
But to the OP: I´d book them as soon as you can/have decided where to eat. You can always cancel them later if your plans change.
I would bet that most October vacationers who have made ressies thus far have made their ADR's. I highly recommend that the OP get ADR's made as quickly as possible to get her favorite places...and again...she WILL have to be flexible with alot of places as far as time.
