when to make pies?

we are eating thanksgiving early this year...by 1:00 or 1:30. Usually we eat around 4 or 5 and I just make pies that morning. Will they be okay if I make them the night before? I just don't think we'll have time. Haven't worked out when we'll need to put the turkey in...20-24lb so should take quite a while.
 
I make mine the night before. Most of the time, I think they taste better once they're allowed to set for awhile.

I'm not sure about the pumpkin or sweet potato pies though, no one in my family eats those.
 
I make my crust a couple of days before, fill them the night before and bake them the day of on the shelf above the turkey. If time is an issue, pumpkin pies are fine to make the night before.....for the most part all pies are as long as you don't need them to be hot (you could warm the fruit pies before taking). I do not do any meringue pies the night before...the crust gets too soggie (sp?). Another thing I have done is put the pies in while everyone is eating....then they are nice and hot when it is time for dessert.
 
I'm making French Silk chocolate pies....doing it the night before. We're eating around 1pm also, so I want to have the desserts out of the way. My parents are also bringing over pumpkin pies from Bakers Square...thats a lot easier.
 

I always make my pies the day before Thanksgiving. Won't be making pies this year though
 
I make the pumpkin , french silk pie the night before and the cheese cake plus the dessert breads. The Lemon meringue is made that am. of T'day. I do the pototoes and jello mold the day before too.
