When to check for rooms opening up?

We were looking at going down for 4-5 nights somewhere between 11/1 and 11/15...ideally to catch the overlap of Food and Wine and Christmas, since we haven't done either. We want to stay at one of the three Deluxe Epcot resorts but they appear to be all booked for any combo of nights I tried.

Are there any strategies to check when rooms might become available? Does Disney release more rooms at various points of time, or is it just luck of the draw with cancellations? Are there any other ways to book a room at one of those three hotels that's worth trying?

Rooms come available almost on a daily basis. I would check some of the third party sites like Orbitz or Travelocity to see if they have what you want. Bonus with orbitz you can add their 15% discount on and get the room for less. If that doesn't work, have you thought about a split stay, do a moderate or a MK resort for the portion you can't get the Epcot resort. Or another possibility, check Dolphon/Swan, best of both worlds as they are Epcot resorts at lower prices.
 
Just keep checking, but keep in mind F&W is insanely popular for Epcot resorts, so don't be too disappointed if you can't find a room in that area. I booked our trip for November 2017 at 499 days out because of how popular the area is and I wanted to make sure to lock in the resort of our choice. Even with being so far away from that time, I was anxious until it was in the system.

If I were you, I'd call and check everyday. Vacations fall through frequently. But if Christmas is part of the appeal, try some MK resorts. They won't be decorated at that time, but the actual park will be.
 
Honestly, what I do is directly call the hotel I ant to stay at. You can also call the main Disney reservations number but I've always found a room when I call Pop Century directly.

When you call the hotel "directly" - even from your room - you are not connected to the resort front desk. You reach a central call center - not matter how they answer the phone. The phone center may or may not even be in Florida. Often the CM's on the phone have never been to WDW.
I know they answer as if they were the hotel, But they are not.
