When to buy tickets, when to make reservations etc?

We are going Mon-Wed before Thanksgiving with the entire family. I know it's going to be crowded and I want to be prepared. We want to eat at the Blue Bayou and Ariels Grotto. When do I make reservations for these? (What's the earliest I can do so).
Also, 3 day park hoppers are "on sale" on disneyland.com Does anyone know if that is going to go away soon?
We got our HJ reservations awhile ago so that's taken care of...

What else do I need to do? We are driving not flying so that's not an issue.

Make your Priority Seating reservations "2 months" out. You want to eat on November 29th you call and make reservations on Sept 29.
