Its getting harder and harder to predict crowds. However, September, after Labor Day is generally very uncrowded. I have been a few years during that time as well as many other non crowded times and I can tell you that mid September is very nice as far as crowds. However, any uncrowded times will see: ride rehabs/closures, shortened hours and lack of evening entertainment during the week (as in no evening entertainment Monday-Thursday). At WDW Fantasmic, Wishes and Illuminations run almost nightly, all year long. There is always something to see and enjoy at night even in the deadest times. DL is not like that. Off season, the fireworks and parades only run on the weekends and Fantasmic at times doesn't run at all. So if nighttime entertainment is your thing, know that going offseason may hamper that.
Obviously all months but summer months will have periods when its uncrowded. However holidays like Lincoln's Birthday, President's Week, MLK weekend, Veteran's Day, Spring Break etc., will run up the crowds during off season months.
Also to consider is that DL has a HUGE local attendance. So ALL weekends, all year long will be crowded. WDW is more of a tourist thing so weekends can be relatively quiet there. That really doesn't happen much at DL. So make sure you stay some week days/nights regardless of what time of year since weekends will be crowded regardless of when you go.

During the offseason post Labor Day to about a week or two before Christmas, the onsite hotels run "stay four nights, get the fourth night free" deal. Park hopper ticket prices generally go to a "everybody plays for the kids price" after Christmas until Spring Break. So both of those promotions help with the cost. The offsite motels can offer great deals, are in some cases closer to the parks than the onsite ones and can be very inexpensive, around $100 a night give or take a few bucks. There are motels literally across the street, closer to the gates than some of the bus stops at the WDW parks. So its very convenient.
