Not sure when they do "officially" announce the next year's seasons, but when I questioned CRO in planning next years' February/March vacation, they admitted that they basically follow the same schedule each year. This is based on when the holidays fall in the calender year (i.e., Daytona 500/President's Day - Peak Season begins the Friday before).
This year I was able to check in on the last day of Value Season and all my nights were charged at that rate - a nice savings. Next year, since I could only find availability on DCL in Peak Season, I'm going on a Land/Sea Package (at the same cost as a week in Value Season) - seems strange to me, maybe because it's a week after President's Day?
CRO did tell me you can book room only, then switch to whatever discount you want to use later.
The only problem with doing that is that they want a regular season rate 1 night deposit, and I need to book a FW cabin... That is $306.88 with tax.. a little more than I can swing right now..
