When do you do your baking??

I make about 7 different kinds of Christmas cookies/fudges/candies for the Holidays and I'm anxious to get started with the baking but I don't want to make them too early and have them be stale by Christmas. I usually make them the weekend before but still some are not as fresh as I'd like them but I have too much to do the few days before Christmas to do it all then. I like fresh cookies :)

I was just wondering when everyone else does all their baking!!!
 
I start baking well in advance and put it in the freezer. This works well with most cookies and bars. I also put a fresh box of baking soda in the freezer too to keep out any unwanted tastes. I have done all my baking the only down side is that I keep sneaking into the freezer and eating them.

Most of it is done the first weekend in December. Quick breads I actually do when I do my Thanksgiving baking - freezing the Christmas loaves as soon as they are cool. The cookies, etc get split into those that are frozen and those that are "tinned". Actually I use square tupperwares with wax paper between layers. They work great and cookies are plenty fresh through the holidays. Of course the portion that is frozen is so there are some left!

I already did the majority of my baking last weekend (Friday) and then we walked around the neighborhood on Saturday and passed out bags of cookies to our neighbors and postman. I may do one more batch of cookies next weekend, but I like to get it done and passed out early, before people get sick of all the sweets!
 

I simply don't have room for storage, so I don't do mine until a day or two prior to actually needing whatever. The "when I need what" varies from year to year.
 
I started mine last week. DD and I call it the "12 days of baking" at our house. I make about 15 different kinds of cookies and fudge (some I make double and triple recipes of). Don't want to know what it all costs but I absolutely love it. I gove lots away to teachers, neighhors, family. I put most of my cookies in tins and have never had old cookies. I hide them well so they are not open, stolen and stay fresh.
 
Like everyone else I make several batches of cookies and fudge. I need to start this week since Friday is the last day of school for my girls. I plan to give the main teachers an actual gift but for the office staff and after school care people, I'll take a plate of banana nut bread, fudge and assorted cookies in either Wed or Thurs. Then I start baking another round for neighbors, friends and family. By the end of the month I will have baked probably 6 or 7 loaves of banana nut bread, 3 or 4 batches of fudge and DOZENS of assorted cookies. As someone stated earlier, I'd hate to see what it costs but it is fun.
 
I started last Saturday. I made chocolate fudge, peanut butter fudge, chocolate clusters, spritz cookies and peanut butter cookies with the kiss in the middle. I keep them in the fridge. All of these stay good in the fridge.

This coming weekend I will make the gingerbread cookies, sugar cookies, pizelles, and breads which in my opinion don't store as well.

Isn't this fun? I just love holiday baking!
