Stuff will start coming down a few days after NYE. I think AKL took their tree down by like the 4th this year. Baring another long term cold snap, usually most of it is down by like the 15th at the latest.
For the most part, whenever they have time. For years I used to go the very first week in January. Sometimes decorations stayed up, sometimes not. But what always amazed me was that when decorations came down, the area was always replaced, never left "bare", even for a day. For example, I remember seeing a Christmas display in Epcot one year. The next morning we were by the same area in Epcot, and not only were the decorations gone, but the area was all re-decorated with pretty flowers like there was never anything else there. But the last couple years, when we've gone for Marathon weekend, Christmas decorations were still up and I remember going on the Christmas themed Jungle Cruise.
