When do breakfast buffets stop replenishing?

If I make a late breakfast reservation for 11:00, will I have the same food quality and amount of time to enjoy the buffet?

Most of them transition gradually to lunch food. Move one half of the buffet to lunch first, then switch the other buffet later. They will stop making more breakfast food but the transition is usually 30 minutes+

We had a seating at 11:00 at Crystal Palace. We had plenty of time to enjoy the breakfast offerings. The server let us know when they were switching over and told us we didn't have to rush. We could stay and enjoy the lunch offerings too and meet the characters for a 2nd time!

We have eaten at Boma late breakfast several times.
They have been continually replentishing the food. I've never seen empty dishes sitting out while we were there.

Boma is a little different though because they don't do lunch. At places like CP they have to have lunch food out by 11:30 when lunch reservations start coming in.

True, they will transition to lunch, but they will continue to replentish the food up to that point. They will not kick you out when they are done serving breakfast.
