I am on a kick lately - been having the same thing for dinner almost every night for the last month.
Saute pan with EVOO. Toss in chopped red onion and some garlic. Get it going.
In another pot, boil water for noodles. Once you have the pasta in there going, throw some of the boiling water into the saute pan with the veggies (about 1 - 1.5 ladle full). Also throw in some fresh chopped broccoli, a boullion cube (chicken) and a few fresh slices of lemon. Oh, and some red pepper flakes.
After a few minutes, toss in some shrimp and cook until pink.
Drain noodles.
In saute pan, add a little cornstarch or cream cheese (to make it thicker). Whisk until smooth.
Toss over the noodles.
Another fresh lemon slice squeeze on top.
I LOOOOOOOVE this dish!!
