I love potatoes in any form, but PIEROGI CASSEROLE is my all-time favorite.

Anyone interested in sharing some of our favorite potato recipes?

Please share your recipe for PIEROGI CASSEROLE.

Here ya go...

1 lb lasagna noodles, cooked
3/4 lb cheddar or velveeta cheese, grated
2 sticks butter
2 onions, finely chopped
salt & pepper to taste
10-12 potatoes, peeled, boiled & mashed

Cook noodles & drain. Cook & drain potatoes. Mash potatoes, then add cheese & beat well. Saute onions in butter until soft. Add 1/3 of onion mixture to potato mixture. Salt & pepper to taste. Generously butter 13x9 baking pan. Place a layer of noodles, then a layer of potato mixture. Repeat, ending with noodles. Pour remaining butter & onion over all. Cover with foil. Bake at 350 for 20-25 minutes. Let stand 10 minutes before serving.
