I travel for business quite often, and honestly, there isn't a lot of difference between airlines. I think overall I like Southwest the best if I had to choose. From a customer service perspective, they seem the best. But I've had good experiences on many airlines and bad experiences on many of the same airlines.
As far as aircraft, it depends. I've been on some awful, old, beat up interior planes on Delta, and I've been on some brand spanking new planes on Delta. Of course, you can replace "Delta" with American, Northwest, USAir, United, etc. in either of the two previous sentences.
Other than Southwest, I tend to like the newer "regional" airlines, such as Airtran and Frontier the best. They have newer planes, and just generally seem to have a better focus on their customers. All that being said, I've heard great things about jetBlue, but they don't fly here.
I know it really doesn't answer your question, but I really don't see a consistent difference with the "product" offered by most airlines, price is the driving point for me if I'm travelling for leisure. The most convenient flight time is the driving point for me if I'm travelling for business.
