What's your Christmas menu?

Unfortunatley we will be at my MIL's so dinner will probably be:

Overcooked and cold beef tenderloin with ZERO seasoning or sauce (She cooks it in a pan with about 2" of water in it so the bottom is basically boiled meat and plans it so it comes out of the oven an hour before we eat)

Burnt potatoes au gratin made with nothing more than salt, pepper, swiss cheese and way too much milk so it's like potato soup with a burnt swiss cheese crust on top.

corn from the can

crescent rolls

There you go... lol DH tried to get Christmas here this year but she would not budge. I am not a chef or gourmet cook by any means, but I am a decent cook and I put as much effort as I can into my holiday meals.

Okay that that just sounds Nasty LOL

I only host Christmas eve, and we do a selection of appetizers/small portions rather than a sit down meal. I keep it pretty simple, since there's only the five of us plus my mom, and for part of the evening my brother & his fiancee.

This year, I'm making:
Cranberry glazed meatballs
Crab stuffed mushrooms
Bacon wrapped scallops
City chicken
Assorted pierogi
Deviled eggs
Shrimp cocktail
Veggie tray w/ ranch dip
Cheese, crackers & summer sausage
Crab dip w/ crackers

And for dessert:
Chrusciki
Chocolate fountain w/ orange wedges, strawberries, bananas, raspberries, pretzels
Two-bite chocolate peppermint cupcakes
Two-bite orange cheesecake w/chocolate drizzle
And probably some sort of cookies my mom will bring, usually Russian tea cakes and decorated sugar cookies.

My mom will probably stay the night, and for breakfast we'll have the same Christmas breakfast we've had all my life - fresh kielbasa and egg bread w/raisins.

Where else good salmon patties and fried green tomato at.

Ooh, now that's some good food! Fried green tomatoes are hard to come by up here this time of year, what with not being able to get green tomatoes at all, but man do I love them during the summer when the green tomatoes are just outside the back door.

How bad for do want the collard greens be for you. LOL

First I would get a hammock. The hammock is put in the collard greens. Then I would extra salt, pepper, and red pepper.

I would cook the hammock and the collard greens for about 3 to 5 hours. About the last hour of cooking I like to add hot peppers to mind.

Now that collard greens are done. Get the cornbread and hot sauce and mixed all the together for a meal. I am talking real cornbread and not jiffy. The buttermilk kind. Now I am showing my true southern roots.

Do you mean hamhock?.... I would think a hammock would be sort of chewy.

MagicMom, I was thinking that must be what she meant. Hamhock, fatback, bacon or whatever seasoning you prefer, but good southern collards have to have something in them.

I can relate! At my inlaws we eat on paper plates with plastic utentils on our laps (if you are lucky enough to find a seat somewhere). usually I am out of luck since I have to get food for my kids first. Its next to impossible to saw through the tough meat with a plastic knife! It usually feels more like a barbecue than Christmas dinner! They just started having vegetables! Oh appetizers are pickles, olives and pretzels!
Dessert is never homemade or even from a bakery for that manner!

:rotfl2: I just fell off my seat from laughing so hard! I thought maybe the wine I'm drinking was making me a little fuzzy in the head trying to think of what a hammock was. Then I figured it was some sort of cheesecloth type thing :confused3.

Since DD is working Christmas Day we are having a Christmas Breakfast...

Baked French Toast
Cinn Rolls
Bacon
Potato Bake
Quiche
Cold Cereals/granola
Yogurt
Fresh Fruit
Juice
Tea
coffee
hot choc
CHAMPAGNE!!!!!

For dinner later I am just baking a rosemary chicken and having veggies and potatos.......it will only be our family by then.

Christmas Eve we are going to my SIL's and will be having the 7 fishes:scared1: I don't like seafood really so I'll just have linguini with claqm sauce and fill up on appetizers, lol. My 2 girls will be in heaven though. They love seafood and I won't make it for them so Christmas Eve is their favorite. Christmas morning, my DH always makes potatoes and eggs. We do a buffet style at my brothers for dinner. It usually includes a spiral ham, eggplant parmigiana, lemon chicken, some sort of pasta(usually ala vodka) some sort of shrimp dish, salad and my SIL makes some Dominican dishes. If we are very lucky, my SIL's sister will make homemade empanatas. I'll make buffalo shrimp dip, spinach dip and clam dip for apps.

Sorry, I peed myself laughing so hard.:rotfl2:

It took me a minute to figure out what she meant. I hope the poster isn't offended. I'm really not making fun of her.....more like silly laughing along. We all make word mistakes from time to time.

I have no clue, but a lot of what you have identified sounds delish.

I guess I should get working on my menu. I am probably going to go with a prime rib or turkey. Who knows.
