Water from that part of Florida has more sulfur in it thus the odor and taste you get from the water fountains. Add to that the bromine or chlorine (whichever was chosen for a particular ride) and the combination is more unique.
L'eau de Disney? Normally "l'eaux" have perfumes added as well. After you buy it at a Disney gift shop and bring it home (remember that containers with more than 3 oz. have to go in checked luggage), what would you use it for?
By the way, the most common use of "l'eau de <whatever>" is an alternative to deodorant.
