What's for dinner? :)

We're going out, probably to Applebees.
 
Don't know yet. We'll likely go out. Or eat Pollo Tropical.
 
Having friends over, making chicken enchiladas and other assorted Mexican fare. :) :) :)
 

Don't know. We're trying a new (to us) restaurant to celebrate our 18th anniversary which is actually Monday. We're going without the boys, so it will be quiet at least, lol. We're trying Carrabba's Italian Grill. Any recommendations? I checked the menu online and it looks like lots of choices. I'm having trouble deciding on dessert - creme brulee or this thing called 'chocolate dream'.
 
Homemade crab soup. Got a few dozen crabs yesterday and stayed up half the night making soup out some of them. Yummy!
 
Wow! So most everyone eats out on Saturday nites?

Not me--DH out of town. And there is no way I'm hauling 3 kids (5, 3, 3 mos) to a restaurant alone.

That sounds so delicious! Chicken enchiladas and Mexican fare are my favorite!:teeth:

Here, it's going to be pizza. I have a free coupon for a large one.:D
 
I just ate 3 freshly picked ears of corn. Not too sure if I'll be eating anything else.:o

Yum! Do you marinate overnight? Then grill the chicken?

You can marinate overnight for extra flavor. Today I'm just doing it for a few hours and then I'll BBQ when I get hungry.

Here's the recipe, very similar to one my Nana used:


1 cup lemon juice (I used lime juice today)
1/4 cup vegetable oil
1/4 cup vinegar
1 tablespoon dried oregano
2 teaspoons garlic powder (I used crushed garlic cloves)
1 whole chicken, cut into pieces (I used 6 whole chicken breasts)
salt and pepper to taste

1. In a large glass bowl mix lemon juice, vegetable oil, vinegar, oregano, and garlic powder. Place chicken pieces in the bowl, and season with salt and pepper. Cover, and marinate in the refrigerator at least 1 hour.
2. Preheat an outdoor grill for high heat, and lightly oil grate.
3. On the prepared grill, cook chicken until no longer pink and juices run clear. Periodically brush chicken with the remaining marinade mixture while cooking. Discard any leftover marinade.
 
Grilled chicken, new potato salad, and caesar salad. Probably some corn for DDs since they do not like caesar salad!
 
dh is eating stir fry (he likes it WAY too hot for my tastes) and dd is having chicken and mac and cheese and me - well I am having filet mignon. and some potato salad.
 
I was just wondering that myself. We went out to dinner last night, so I guess that's not an option again tonight.;)
