What's for dinner? Was it "budget"?

Tonight will be boneless, skinless chicken breasts on the grill with BBQ sauce. mashed potatoes and gravy on the side, along with a veggie... maybe broccoli/cauliflower with cheese. :thumbsup2

I am going to try homemade chicken and noodles. I put the chicken on to cook in broth in the crockpot. I have a package of frozen egg noodles that I think will be great in it.

This is a hope it works recipe...if not I guess it will be sandwiches. :rotfl2:

We BBQ all year round though... if DH can shovel a path to the grill, he is good to go. :goodvibes

That is the way my husbands family is...nothing keeps them from the grill:lmao:

I wasn't sure how far reaching this thing is supposed to be....I swear if we get the foot they are predicting I may cry!!:sad2:

Tonight is QVC Kansas City steaks...free because my mom has us on auto-delivery for the past 3 years now! Rice Pilaf (1.20), and fresh broccoli (.85) I'll make some frozen corn for DS8 (.10?)....

I'm so hungry, I can't wait to eat! LOL

We also BBQ year round. I think we use the grill 3-4 times a week. I don't know what we would do without our grill. Our neighbors must think we are nuts, because we are clearly the only ones that go out to BBQ after having to wipe off the snow & shovel it away. We love to BBQ, nothing could keep us away!
 
We are going out tonight.

My oldest daughter got her driver's permit, I signed articulation agreement papers to transfer to ODU yesterday, my 13 yo earned 2nd in a state PTA contest, my 9yo is getting her braces on Tuesday, my 4 yo had his first haircut at a kid's salon, and our 2.5 yo has self-weaned.

Not frugal, but it's our tradition to eat out and celebrate. :cool1:

Tonight is the spaghetti night. I am doing so well on budget dinners so far this week! I even had some dessert with dinner last night. My DD7 is doing a seed project for school and she needed one more set of seeds from a food. I went to the grocery store and found cantalopes for 99cents! So we got seens AND dessert last night!!:lmao:

We've got an inch accumulation right now.

The chicken & noodles went over okay....I'd say $5 for dinner for 3 and leftovers galore.

Using the chicken I didn't put in last night for bbq chicken and probably baked potatoes as the youngest has decided chicken is not edible. I told her she'd have to get over it as it was on the menu and not coming off. (bad mommy I know but there are just times my DD's pickiness gets to me)

We are trying to limit the amount of palm oil coming into the house, which of course is EVERYWHERE!!
 
Can you share the Tomato, basil and spinach soup recipe please? Thanks.

2 tablespoons butter or olive oil
1 large yellow onion, finely chopped
1 teaspoon minced garlic - I use 2-3 cloves.
1 1/2 cups milk
1 (28 ounce) can tomato puree
2 (15 ounce) cans of petite diced tomatoes
1 tablespoon white sugar (I only use 1 tsp)
2-3 cups fresh spinach, torn
1/4 cup chopped fresh basil or 2-3 tsp of dried basil
1 teaspoon salt
1/4 teaspoon freshly ground black pepper
Cavenders Seasoning to taste (optional)
Parmesan cheese
Mozzarella cheese


Melt butter in a large saucepan over medium heat. Saute onion and garlic for 5 minutes. Stir in milk and cook for 4 minutes, stirring occasionally. Stir in tomato puree, diced tomatoes and sugar. Mix well, cover and bring to a boil over high heat. Reduce heat to low and simmer, covered. Add spinach, basil, salt and pepper and simmer, uncovered, for 5 minutes, stirring occasionally. Sprinkle with parmesan cheese, if desired.
 
Tonight we're having white chicken chili. I thawed out enough chicken breasts to grill 2 of them so I can make grilled chicken salad tomorrow. I have this great recipe that calls for the chicken, candied walnuts, and grapes in the salad. It is YUMMY!!
 
Not exactly sure what the final dinner will be but I put 4 small boneless skinless chicken breasts, the leftover celery, carrots, onion, and 3 cans of chicken broth in the crockpot... $3.50. Will decide later what it is going to be...
 
Tonight we are going to a baseball game (YEAY!). . . but it won't be budget :lmao:

But last nights dinner was only a couple bucks. . . :)

We go through alot of Cavenders. I cook with it a lot, but DH is the Cavender's King. It wouldn't suprise me if he put it on ice cream.... well, maybe a little suprised.


Today I made chicken noodle soup. DS was begging for it.

Chicken - maybe $1.00 - I buy a ten pound bag of quarters, cook them all up, save the broth, package the chicken up to make quick dinners like chicken & dressing, chicken & rice, chicken noodle soup, ect.
Egg Noodles - half a bag - .50
Celery - 2 stalks from an .89 pk - .25?
Onion - 1/2 onion @ .25 lb - .13?
Carrots - can't remember :confused3 .50 ?
Seasonings .25

Under $3 and that will make enough for two meals for three people.

Tonight it's beef tips in the crockpot:

2lbs beef stew meat
1 pkg lipton onion soup mix
1 can cream mush soup
1 large can mushrooms
1/2 cup red wine (I use Barefoot's Cabernet)

Left over mashed spuds, homemade bisquits and peas (those are for dd)
