Meatloaf Muffins with Green Beans on the side. Not too imaginative, but my kids will eat it!

Does meatloaf taste good? The last time I had meatloaf I was 12 years old and it was so bad the dog wouldn't even touch it :lmao: I've been too chicken to try it again. I'd love your recipe.

My recipe is really easy. I buy Lipton Onion Soup mix and follow the recipe on the box. It always turns out well for me, and my kids love it! Sorry I can't be more imaginative. It's been a long day.
 
We are leaving for Disney Saturday. Sooooooo........we had pancakes made like Mickey heads, scrambled eggs and bacon. Yummy!!!!
 
we had halupki soup. Which is basically stuffed cabbage recipe modified to a quicker cooking method. I don't preboil the cabbage and don't roll it and stuff it. I shred the cabbage and cook it in tomato juice. I roll the hamburger, spices, and rice into balls and drop them into the boiling soup. I cooked it for 2 hours and it was yummy. :Pinkbounc
 
Hmmm...change of plans from our pasta & apple-gouda sausage plan for tonight. DH has had a wretched day at work with lots of late meetings scheduled, so he's picking up something on the way home. He'll get here in time to eat quickly, and then he has to dash out to another meeting, then come home and log in to work AGAIN. ugh. Poor guy - no yummy dinner for us tonight...
 
:thumbsup2 We had salmon with teriyaki and garlic, crab cakes, stir fried green beans and carrots with steamed rice.
 
My mom's recipe - ground beef, corn and mashed potatoes.

One of the few things everyone will eat.

That is what I do. I use it for anything that contains ground meat. Put the Golden Onion in my groung turkey stuffed peppers, and use the regular in meatballs. I think it is one of those no-fail things!
 
Here's the recipe:
SPINACH LASAGNA ROLLS

1 (15-ounce) container whole milk ricotta cheese
1 (10-ounce) package frozen chopped spinach, thawed, squeezed dry
1 cup plus 2 tablespoons grated Parmesan
1 large egg, beaten to blend
3/4 teaspoon salt, plus more for salting water
1/2 teaspoon freshly ground black pepper
6 uncooked lasagna noodles
26 oz. marinara sauce (we use Classico Tomato & Basil), but you could use whatever sauce you like
1 cup shredded mozzarella (about 4 ounces)
dried basil
dried oregano

Preheat the oven to 450 degrees F. Whisk the ricotta, spinach, 1 cup Parmesan, egg, salt, and pepper in a medium bowl to blend. Boil the noodles until just tender but still firm to bite. Drain. Arrange the noodles in a single layer on a baking sheet to prevent them from sticking. Butter a 13x9x2” glass baking dish. Pour about 1/3 of the marinara sauce over the bottom of the prepared dish. Lay out the lasagna noodles on a work surface, then spread about the ricotta mixture evenly over each noodle. Starting at 1 end, roll each noodle like a jelly roll. Lay the lasagna rolls seam side down, without touching, atop the sauce in the dish. Pour the remaining marinara sauce over the lasagna rolls. Sprinkle the mozzarella, the remaining 2 tablespoons of Parmesan, basil and oregano over the lasagna rolls. Cover tightly with foil. Bake until heated through and the sauce bubbles, about 20 minutes. Uncover and bake until the cheese on top becomes golden, about 15 minutes longer. Let stand for 10 minutes.

It's pretty easy, the worst part to me is trying to not break the noodles. Thanks for your recipe, I just love chicken and pineapple together.

I totally agree. It's one thing I never let run out. My mom always told me that if you have a pound of ground beef and lipton onion soup mix, you will always be able to make a meal. It's so true!

Thanks for the tip. Never thought of using it for meatballs(use it for my sheppards pie), gonna try it. My meatballs are terrible.
