I'll be baking a yummy chocolate cake! It's the 2nd birthday of me and my housemates' webzine on the 4th so we're pulling out all the stops!
You guys are lucky having a holiday to celebrate your country. Closest thing we get is when England play in international football tournaments, everyone goes England nuts then!
We're still having our annual party, although we've scaled it back a lot this year. We have company here from Maryland, Nevada and Texas. The guys are playing in a 3-day golf tournament.
For the 4th we're doing beer brats on the grill, and I'll make sauerkraut to go along with them, baked beans, potato salad and chip and dip. Tomorrow morning before it gets too hot I'm making cookies, brownies, and cupcakes (with red white and blue sprinkles of course) and vodka slushes (which sounds terrible, but it's a great lemonade/oj concoction topped off with 7-up--perfect for hot weather!)
DH works at a large company here in our town and they have plant shut down 4th of July week. Our plans for the entire week are to get some work done on a rental house we own. Of course as hot as it has been lately we'll have to get up early and get started before it gets too hot. We also live on a farm and raise cattle and goats. With the heat and lack of rain, we have to check on our livestock severeal times a day AND if we don't get some measurable rainfall (haven't had any since mid-May) soon, we'll have to start feeding hay. This is very unusual for us. Rumor has it b/c of the lack of rain in middle TN there may be a ban on fireworks but I've not heard this officially. I'm sure Monday we'll throw a few burgers on the grill and then go to our local park and watch the fireworks. It'll be fun.
We're having company all weekend. The only interesting thing I'm making for the 4th is a Jello poke cake - I hadn't thought of it for years, but it sounded good when I was planning my menus. I have 3 dinners planned - one is loosemeat sandwiches and baked beans, another is grilled salmon and brocolli rice casserole, and on the 4th it'll be fried chicken and potato salad. I've got tons of fresh fruits and vegies for salads, etc. and have been baking up a storm, so I should be set.

We have beef and pork ribs, brats, Teriake Chicken, Cajun Chicken , hot dogs, and hamburgers... rice crispie bar things, ?brownies if it isn't to hot in the morning... German potatoe salad, guacamole, peach pie, watermellon, and what ever else shows up....no idea how many will be here....should be fun, IF I get the laundry done!
Our plans changed. It stormed last night and we were without power for seven hours. None of us got much sleep. So the cookout this year is going to be July 5th and we're fixing sausage with waffles. It's easy comfort food and the kids were craving waffles.
