Our plan is to stay at AKL May 15-21 but only go to the parks Monday thru Friday on a 4-day hopper and spend one day at the resort or maybe a water park. We also plan to do mostly counter service, maybe only a couple TS. If this was your trip what parks would you do which day and what hopping if any would you do? Give me your game plan. Park schedule below.

Well keep in mind that I have not looked at crowd calendars for your dates, but if I was planning M-F in th parks, I would spend Sunday at AKL. It is gorgeous, so I would exploe and relax there. Mara is pretty good CS, so I would eat there or head to Kidani Village and have TS at Sanaa.
Monday we usually go to DHS or AK, depending on the calendars
Tuesday I would Pre park breakfast at BOG, and spend most of the day there, leaving after the afternoon parade. Maybe hop to Epcot or DHS for one of the evening shows.
Wednesday I would resort hop and maybe DTD.
Thursday Epcot for the day, and then over to whatever park I missed evening entertainment.
Friday Ak or DHS, and then MK in the evening for evening entertainment.

Personally I would want 5 day tix.
 
Well, the idea of only doing 4 park days kills me, but here goes:

Monday: DHS, then hop to Epcot
Tuesday: AM EMH at MK, then hop to AK
Wednesday: Epcot (and maybe hop to MK for EMH)
Thursday: Typhoon Lagoon and Disney Springs
Friday: MK then hop to DHS for EMH.
 
We always pack so much in we are purposely leaving one free day to relax away from the parks. How much earlier than the park opens does BoG seat for breakfast?
 

But you are leaving 3 days open, really. Sunday, one day during the week, and your departure day. We usually break the days up, and if we plan an "open" day, we use it to go to dinner in a park and catch evening entertainment, or explore the resorts. On my last 5 day trip I skippped hoppers and just planned a park a day, and planned so we got in either early or late, depending on how late the evening prior was. WE were not able to get to AK though, the rtrip was just too short. I missed it.

BOG starts at 8 AM. Just look for park opening if that matters. This is a pretty expensive meal if you are not on teh DDP, so I woudl plan of sharing the meal if you both are light eaters. This early entry gets you to the mne train queue , or my personal favorite, Peter Pan SB queue early, and you are already in the park so when the attractions start, you are there ready to go.
 
Sunday at AKL
Monday at Epcot
Tuesday @ HS (or MK/hop to HS if there's not enough at HS by that time for the whole day)
Wednesday @ the resort (or if you feel like it Typhoon Lagoon)
Thursday @ MK
Friday @ AK
We never bother hopping but you could mix it up if you want
 
Typically we only do 4 park days and our schedule typically looks like this:
1. RD at MK, break back at resort from 2-5, back to MK until close
2. RD at AK, break back at resort from 2-5, hop to either MK or Epcot until close
3. RD at Epcot, break back at resort from 2-5, back to Epcot until close
4. RD at HS, break back at resort from 2-5, hop to either MK or Epcot until close (usually it is the park we didn't hop to on day 2)
So, total time at each park= MK:1.5, Epcot:1.5, AK:.5, HS:.5

We like to take a day break in the middle of our park days to hang out at the resort, do DTD, etc. Also we don't necessarily to those park in that order; we look at the crowd calendar and try to match it up with the the recommended park of the day. Although, I do like to try and do our first day at MK because it's the MK :earboy2:

Well for me, I wouldn't be staying home that 5th day ;) Especially for the minimal price difference. But in your case, assuming Rivers of Light is open I guess I'd do:

Monday: MK/AK for ROL
Tues: EP - all day with IllumiNations that night
Wed: water park/rest
Thurs: AK/HS - Fantasmic
Friday: either MK all day, or return to park of choice in the morning and do MK that evening for Wishes

I honestly didn't pay any attention to crowd/EMH with this, because to me, I like the idea of opening and finished with MK, no matter what.

If you did splurge on the 5th day, I'd do:

Monday: MK/HS - Fantasmic
Tuesday: EP - all day w/ IllumiNations
Wednesday: water park/AK - ROL
Thursday: AK morning then take afternoon/evening for rest, or take in a show like HDDR etc...
Friday: HS/MK - Wishes
 
We had a similar schedule in early December, although we arrived on Monday afternoon and did not take a day off the parks.

Here is what we did (with some notes about why we chose our parks, some of which would not apply to May):

Monday -- Arrive at AKL on MDE about 5:00, check in then bus to DS, dinner at Cooke's of Dublin and a visit to GS at Disney Quest to activate our military tickets.

Tuesday - MK rope drop, lunch at BOG, FP 7DMT, Space, and BTMRR, leave after FoF parade, bus to Boardwalk. Dinner at Boardwalk Bakery (a fave -- great lobster rolls!), walk to DHS. Osborne Lights & Fantasmic. (Note: we chose MK this day because there was an MVMCP that night, which kept the crowds during the day very manageable.)

Wednesday - DHS rope drop, FP TSMM, ToT, and Star Tours. Did RnRC at rope drop, had a great time with very low crowds all morning. QS lunch, left by about 3:00. Bus to MK, dinner at LTT at 5:30, then evening entertainment and a few rides (Castle lighting, CtM, Wishes, MSEP). (Note: This was the only night without an MVMCP during our visit, so we knew it would be crowded -- which it was -- but it was our only chance to see the nighttime shows.)

Thursday - AK rope drop, FP Safari, FoLK, and Everest. Wonderful day, love AK, did everything and left about 5. Back to AKL, relaxed and went to dinner at Sanaa about 7. Fantastic meal, our favorite of the trip.

Friday - Epcot rope drop, FP Soarin', Mission Space, and Spaceship Earth. Did TT at rope drop. Candlelight Processional dining package lunch at Garden Grill. Very good, but in hindsight, too similar to LTT. Enjoyed them both, but would have added something else for variety. Had a wonderful day, loved the CP, and watched our favorite show, Illuminations, from Italy.

Saturday - DME at 11:00, so had a relaxing morning at AKL before departure.

We really enjoyed Mara for breakfast every morning. Either oatmeal or a shared breakfast flatbread (big enough for two. and delicious.) Very reasonable and a great way to start the day. CMs there were always friendly and fun to talk to.

We had hoppers on our military salute tickets, and even though we did not use them Thursday or Friday, they made all the difference Tuesday and Wednesday to optimize around MVMCP.
