This is DH's favorite (without the onion) and I'm going to surprise him by making it on his birthday. I'm having my parents and 3 grandparents come over, so I'm making a double batch. He also loves peas, so I was thinking of having those (which probably no one else will eat) and a salad (which everyone except him will eat) and just leaving it at that. What do you think?

Oh, we'll also be having some sort of cake.
 
What time is dinner??

It sounds wonderful. Is there another vegetable that everyone else would like? Corn or green beans??
 
I would probably go with green beans.
 
I make this with green chile in the pie and then serve tomatos and salsa along with it. Good idea for dinner this week; we haven't had it in awhile!
 

Would you do the green beans even with the peas? I think the corn might be a good plan though. It's definitely not a meal to have bread with.

If it was just the two of us, we'd probably just have the pie!

NMAmy-That sounds good-I doubt I can get him to eat it though.

I thought about that when I went back and reread that he doesn't like the onion in it. :teeth:

We lived in New Mexico for so long--DH and DD are used to eating green chile in EVERYTHING. :rotfl: Things taste bland to us without a bit of spiciness but I have to tone it down some for folks in Michigan.

I feel totally rude asking this but this dish is really good? It seems so basic...very plain...that I can't imagine my family liking it. I am not a cook, I don't enjoy it at all so I'd love to have some simple recipies like this that they will really like. I swear that we aren't that picky, it's just that the only things they LOVE that I make seem to have a zillion ingredents and take hours to make. Everything else is just ok. I'd love to have something simple that I'm not terrified that I'll screw up that they'd love. I swear I'll try it if you tell me that my family who's used to going out to dinner 4 nights a week won't laugh at me.
 
I was thinking some type of potato. My kids would love that would tater tots. My husband would like it with fried potatoes and onions. I might choose some roasted veggies.

You know, it's good, but to me it's a little bland, at least it was the last time I had it. I think with the onion it will be fine, but I think without the onion it needs something extra. You know what though, he made it last time and very well may have left something important out, who knows.

Read the bottom of that page-it's one of their oldest recipes and most requested after all this time. Can't be too bad!

I make this at least once a month for our family. I put in everything the recipe calles for and add some garlic. Dh lik to put hot sauce on his as well.

As for the original question, I wouls serve green beans or a salad and make mashed potatoes.
 
ok, I'm gonna try it. My Dh is so spoiled as his parents love to cook and experiement and they never had things like meatballs and noodles which I grew up on. They had grilled salmon and risotto when we had fish sticks and rice.
 
Since it's already starchy, I wouldn't do a potato. I would do something green and a fresh fruit salad, concentrating on the fruits your DH likes.

In the intrest of going a litttle healthy I think I would agree. But then again a potao dish would go great with it and it is a birthday. (and there is salad.) I think fruit salad is always great and goes with everything.

My mom used to make this all the time when we were kids. I think she liked it more then us. (I think she thought it was creative and easy.) BTW my mom would put the peas right in it.

Yeah - I'm in the group who wouldn't add a potato dish - I vote for fresh fruit. And I agree about adding the peas directly to the casserole, unless you know some people really don't like peas (I usually like them only in a casserole.)
 
I agree about the fruit. I would serve salad, peas for your dh, and a nice colorful plate with a row of sliced canned cranberry sauce flanked by two rows of sliced oranges. I like the way that combo looks.
 
I'm getting excited guys!! I'm going to use the china we got from the wedding and crystal and all that good stuff that we don't normally use. (We've actually only used the china twice since the wedding in August-but we've only eaten dinner at the table once, so this will make twice for that) Thanks for all the great ideas. I'll let you know what I end up making!
