This is completely hypothetical. Given the choice for each, which would you prefer?

Deluxe: Contemporary, Beach Club, Wilderness
Moderate: Coronado, Riverside, Caribbean Beach

Would love to take a vacation at some point in 2021 (after COVID 19 has mostly gone) and to me those are my favorites in each category. Because that's so far out Disney doesn't even have it available for booking (or at least that I can see). Just trying to get opinions on resorts before having a serious discussion about where to stay
 
Without any more info, Beach Club.

Love the Crescent lake area, and I think those 3 resorts (and Swan and Dolphin) have the best all around location out of all resorts, especially if you are capable of walking distances and don’t need to use the boat. Best pool on property too IMO. Two small-ish negatives, the quick service is very meh (but World Showcase is right there), and not all rooms have full balconies.

It’s also easy to spend someone else’s money LOL, so I’ll pick a moderate too. I find the moderates to be fairly similar, save for smaller POFQ, so I pick Caribbean Beach for the skyliner advantage. But the theming or Coronado and the new tower puts that one in a close 2nd for me.
 
Without additional info: WL and POR

With kids over 8 years old, Beach Club (for SAB)

Solo trip, Caribbean Beach or Contemporary (for skyliner and monorail access respectively)

Multigenerational group: Riverside (for the pool, and boats to POFQ and Disney Springs)
 
I meant to add that it's just two adults which is one reason why value wouldn't be considered. I know there's price savings but I think those are too in your face for being w/out children
 

Definitely BC and POR! Enjoy your trip whenever you end up going, always nice to have something to look forward to 😊
 
If I was doing a split stay i think I would do contemporary and CBR.

Contemporary for access to MK and CBR for access to epcot and HS via skyliner. This gets you pretty decent access to 3 different parks. If I was doing just one place I would probably do beach club for proximity to 2 parks plus a good pool.

Depends. During Food and Wine definitely the Beach Club. Otherwise the Contemporary.
If you are going to Disney Springs and don't have a car, Riverside for the moderate. Otherwise CSR. I avoid CBR at all costs, wasn't impressed by it.
 
Contemporary and Coronado. Contemporary for it's access to MK and other Monorail resorts and Coronado because it's exquisite since the addition of the tower. Great food, Great CMs, whole resort is now easy to navigate since the bridges were built across the lake. Great theming.
 
We are planning our honeymoon in 2021 and we are thinking POR. It just looks like a relaxing place and has a boat ride on property. My Fiancee loves the GF and our honeymoon would be the perfect time for our first stay there. We shall see how much money we have saved up by then.

How does a split stay work? Do you have two separate reservations? So you'd also have to book tickets (and maybe a dining plan) twice as well?

You book the tickets encompassing both stays on the first stay, and call in for a ticketless package to add dining on the second stay.
 
For deluxe I would choose The Contemporary. I'm a big fan of the monorail resorts and the walk to MK.
For moderate I would choose Riverside. I haven't stayed at the other moderates so I can't comment. I did love Riverside and the grounds were really beautiful.

Would probably do Disney Springs on the first night instead of going to a park. And yeah, to me the pictures of CBR looked a little dated for the price.
 
Beach Club or Coronado. YC is my all time favorite deluxe and I've stayed at them all except WL and SS. We love Epcot and being able to walk there is greate. Coronado is my all time favorite moderate and I've stayed at all of them except POFQ. I love the theming of it, I love that it is sort of a deluxe lite and I like the food choices.

OK, my opinion on what you listed:

Contemporary - Wonderful access to Magic Kingdom (obviously) and very roomy rooms. The pool is a bit underwhelming as is the rest of the theming (though I personally like the rooms), but I really love this resort. Warning if you use bus transportation, it does share a bus which can make rides long to the other parks.

Beach Club - Fantastic access to two parks (EP and DHS) that can't be beat, amazing pool complex, and comfortable rooms. We stayed here in January and while we love to mix things up a bit with resorts when we visit, we'd totally stay here again. Great resort all around and the crescent lake area is really great. Was not impressed with shared buses, though. But you only have to worry about buses for two parks.

Wilderness - One of the best themed resorts on property with an amazing lobby, small footprint, and great boat access to MK. Rooms are on the small side for a deluxe and haven't been updated in quite some time (they're redoing them now, but I have no clue how far along they are or when they'll be finished). But it's also consistently one of the more affordable deluxe and is a great resort overall. Shared buses do apply still to and from some parks.

Coronado - One of the best resorts on property in my opinion. Fantastic rooms that are well appointed, beautiful landscaping, wonderful pool, many restaurants to choose from. It also has a gym if that matters to you and is the only moderate with one. I think it's the most deluxe feeling of the mods and is very centrally located so it doesn't take long to get anywhere on property from there. I have stayed here more than once and loved it each time and I have always thought the buses were great. Plus, it never feel crowded there, at least the times I've stayed.

Riverside - We love the theming and the rooms at POR, but the last two times we stayed here the buses have been absolutely abysmal. Getting to the parks in the morning isn't difficult, but coming back we gave up and took an Uber about halfway through our trip. Last trip, the lady controlling the POR bus lineup at MK made my 8-year old cry, so I don't think we'll be back.

Caribbean - Not stayed here but I'm keen to because of the skyliner access. My only reservation about it is that I don't want to stay in a pirate room because they only have full beds and that seems to be the only thing available when I try to book it!

BC. My husband and I recently stayed at BWI and you can't beat the location of the Epcot resorts for Dining and location. The walk to Epcot is so short and the Skyliner to HS is fantastic. Plus the whole area is beautiful. I'll add we've also stayed at WL and it's a gorgeous resort. I just dont think we'd choose it if it was just the two of us.

POR. This was tough because our preference is FQ. It's beautiful, has a nice lounge, decent food court and best of all its small. We love the boat ride to DS, where we prefer to eat when the kids aren't with us.
The other mods have large grounds and you have to take an internal bus which we dont like.
 
In order - Deluxe - Wilderness Lodge, Beach Club (Yacht Club would trump WL though), Contemporary
Moderates - Coronado (if Grand Destino), Caribbean Beach (Skylineris huge advantage), Riverside

All together - WL, Beach Club, Coronado Gran Destino, Contemporary, Riverside
 
Beach Club is hard to beat IMO. Close to Boardwalk, waking distance to Epcot, boat ride to Hollywood Studios and one of our favorite restaurants on site
My second choice would be Wilderness Lodge. That lodge is spectacular and bay lakes is pretty nice. MK is just a short bus or boat ride away with couple of great restaurants
 
Personal Feelings:
Deluxe is BC hands down. I've stayed there twice and loved it. AWESOME, beautiful location between my two favorite parks.

Moderate: Just as a resort, I love POFQ (not on your list). But my POP stay early this year has made me a total Skyliner nut and that alone would push me to CBR. Skyliner is now my #1 resort draw.
