What would you chooose-tickets

We are heading for two weeks in May, staying off-site, five children ages 4-13. The two older children want to spend a couple of days at US for a Harry Potter fix. So one of us will take them to that, but not taking the other three children to reduce ticket costs. So, given this, how many days worth of tickets would you buy for all 7 or for 4 and 3 (the three spending two days at US)? We will do a day at the beach, and likely a shopping day, but otherwise no big plans. And, we are the anti-park stormers-we show up, do our fast passes, whatever has reasonable lines and when we are done, head out-we don't do 12 hour days and we typically pack a lunch and buy snacks. We have been many times and don't feel compelled to pack it all in. We are Canadian so can buy 25% off tickets (by month end). How many days would you do? We don't park hop either, but may do a waterpark. All advice welcome!
 
I would plan out your schedule a bit and purchase tickets for the number of days you absolutely know you all are going. Most tickets allow for you to add additional days on while you are there so if a few decide to go back while others are at US then just hit up guest relations and add the day(s) you need. Just be sure to do it before you use all of the days on your tickets.
